Noodles made from banana and arrowroot starch. The blend of banana and arrowroot starch has improved gut health in consumers. Particularly, bananas contain phenolic acids and soluble fiber (35%), which are natural antioxidants beneficial for health, with various functions such as supporting the treatment of colorectal cancer, aiding in the treatment of diabetes, and addressing obesity-related conditions. We aspire to implement this project to establish a highly feasible agricultural and food processing scientific research (abundant untapped raw materials, available labor force, product requiring low technical skills, high-tech, low total investment cost, quick return on investment). Additionally, a successful project will have significant social impact, creating employment opportunities, addressing environmental issues, and contributing to sustainable agricultural development.
