GINOC dye is a liquid that originates from Gynochthodes sublancolata, a plant that is edible and found in the local vicinity. It is used to color starchy foods such as rice and vermicelli with dark purple due to the presence of anthocyanins. This dye is self-preserving due to its antibacterial and antioxidant properties. In addition, it has no toxic properties, as demonstrated by the brine shrimp lethality test and cytotoxic assay.
