Natural food coloring has garnered increasing attention due to consumer demand for healthier and sustainable alternatives to synthetic additives. Blue pea flowers (Clitoria ternatea) have emerged as a promising source of natural blue pigment, offering not only vibrant hues but also potential health benefits. This innovation explores extraction techniques of blue pea flower extract as a food coloring agent. It explores new ways to get this pigment from the flowers and use it in food. We tested how well it works for color, if it stays strong when heated or exposed to light, and if people like how it tastes. Our goal is to make a natural food color that's safe and meets what consumers want.
