Instant noodles are among the most popular foods in many parts of the world. The umami flavor and practicality in serving are why many people consume it. However, instant noodles can have negative effects if consumed excessively. As a solution, we made processed noodles with katuk leaves as the main ingredient, a superfood that is easy to find and rich in nutrients, including vitamins A and C, iron, and calcium. Durian seeds will also be incorporated into the noodles as a flour substitute, as it is a famous and abundant tropical fruit in Malaysia. During durian season, many durian seeds are wasted, even though they contain many benefits, such as protein, phosphorus, calcium, potassium, and vitamins. This approach promotes sustainability by reducing food waste and maximizing the utilization of durian seeds as it also adds to food diversity and can increase the economic level.
